Chef Matt Perry: I believe all dishes are only as good as their ingredients, which is why I have put in a lot of time to source the best of what is locally available. I’m interested in creating an appealing, simple menu, but done really well. I’m making our own Cornish ice-cream, and our own bread, using a secret ‘mother’ sourdough recipe.’
Changes are made to the menu – chalked up in the bar – every couple of days. On Sundays, only roasts are served – best to book.

Matt Perry, formerly of The Victoria in Perranuthnoe, has created a local, fresh and seasonal menu involving as few food miles as possible. Matt buys beef direct from the Harvey Brothers, who farm out near Pendeen, about ten miles from St Ives – their cows enjoy sea views! – and pork from popular St Just butcher McFaddens. Fish is always sourced fresh, mostly from day boats via local St Ives supplier, Matthew Stevens. Cheese is bought from Thomas Hanson, specialist vendor of Cornish cheeses. Matt also enjoys using less well known cuts and species, eg delicious, locally caught ling is used for the fish and chips. Ling has been highlighted in the recent TV ‘Fish Fight’ campaign by Hugh Fearnley Whittingstall as a sustainable, happy alternative to cod. Traditional but now out-of-fashion Cornish cuts of meat, such as Boxeater and Tags are often offered. The burger baps are baked using a beer bread recipe with St Austell brewery’s Admiral Ale. The menu is truly a celebration of West Cornish produce.

From Alastair Sawdays: ‘Matt Perry’s menus are constantly evolving and have big flavours based on rustic French and Italian recipes alongside sturdy old-fashioned English offerings: try lamb faggot with crispy belly pork, carrot purée, cabbage and bacon and onion gravy; finish with orange posset, marmalade ice cream and shortbread.’
